Ask how long the vehicle stays with you. Under two years — a lease return, a car you're selling, a truck you're about to trade — a sealant is the sensible spend and a coating is hard to justify. Three years or more, especially on a vehicle that lives outside in West Texas, and the coating is cheaper per year and considerably less work.
Caliche dust is abrasive and alkaline. Our water is mineral-heavy enough that spots etch rather than rinse. UV load here is high most of the year. All three of those degrade a six-month sealant faster than they would in a milder climate, which narrows the gap between reapplying sealant repeatedly and just coating it once.
What neither one does: stop rock chips, and neither is a substitute for washing. A coating makes washing easier and less risky, not unnecessary. Anyone telling you a coating means you never wash the car again is selling something.
If you're genuinely unsure, the sealant is the lower-risk starting point — it's included in a detail you probably want anyway, and it buys you six months to decide whether the vehicle is a keeper.
